 The Legend of Sensei Sauce

As a Third Generation of Judo Yundansha (Black Belt) I met my match in a Korean Matriarch while stationed in Seattle. I was in graduate school, teaching Judo and often ate at her restaurant. Her view of the world was simple, people were simple, and her cooking perfection in its simplicity. She was a true Shihan. She instructed us in eating, nutrition, and life and had a sharp business mind. As a student of business and writing a thesis, I asked to do research on her restaurant. I met her fury. “What do you know about business? You know nothing! Be here Friday night; white shirt, black pants.” She spoke no more. That Friday began my life changing adventure: three months of dish-washing and cleaning. Then serving tables only for tips. However, she slowly let me in on her “art” and how to find perfection in simplicity. Through the ’80s and ’90s I practiced this “art.” Sensei Sauce is the culmination of this study and practice. We at Sei-Ki-Kan hope you find the same simplicity in our “art.”

O Sensei.
